Cajun Chicken Fettuccine Recipe

Ingredients

  • 8 ounces uncooked fettuccine
  • 1 large sweet onion, halved and sliced
  • 1 medium green pepper, cut into 1/4-inch strips
  • 1 medium sweet red pepper, cut into 1/4-inch strips
  • 2 tablespoons olive oil
  • 2 cups cubed cooked chicken
  • 4 teaspoons Cajun seasoning
  • 1 teaspoon minced garlic
  • 1 jar (15 ounces) Alfredo sauce
  • 1/2 cup spaghetti sauce
  • 2 cups (8 ounces) shredded part-skim mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Directions

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute onion and peppers in oil until tender. Add the chicken, Cajun seasoning and garlic; heat through. Transfer to a large bowl. Drain fettuccine; add to chicken mixture. Stir in Alfredo and spaghetti sauces.
  • Transfer to a greased 13-in. x 9-in. baking dish. Sprinkle with cheeses. Cover and bake at 375° for 15 minutes. Uncover; bake 10-15 minutes longer or until golden brown. Yield: 8 servings.

My BF & I enjoyed this recipe very much. Had it for Mardi Gras with homemade French Bread. I felt it was a bit spicy, so will add a bit less Cajun Seasoning next time. Would do this again.

This recipe was really easy to execute and was very flavorful! I was skeptical to use all 4 tsp. of Cajun seasoning because my husband does not like spicy food at all (but I love it!). I decided to follow the recipe exactly the first time trying it (substituting linguine) and my husband and I LOVED it! He didn't think it was spicy at all but also had wonderful flavor! It turns out really creamy and delicious, definitely worth all 5 stars!

This is by far the most delicious pasta recipe I have ever made! Since my husband and I love shrimp I added some and it was delicious! I'm sure it would also be great with out. I will definitely make this again!

Yummy, everyone enjoyed it. It was easy to make. I loved the flavor made by mixing the Alfredo, spaghetti sauce and Cajun seasonings. I liked the suggestion of adding mushrooms. They added a nice flavor with the peppers and onions. We will be making this again.

This was really good, though I wish I had been more careful and read the ingredients in my cajun seasoning--I don't know if it's normal, but the one I bought had salt as the first ingredient--not any real spices! I used the amount called for, and it was way too salty for my taste. I added a generous amount of chili powder and red pepper flakes to help balance it out, but wish i had used either less cajun seasoning and more spices of my own or had bought better seasoning! I also added asparagus and mushrooms, which were both great additions for some more vegetables!

I didn't add as much "cajun" seasoning b/c I wanted my toddler to be able to eat it. Everyone in our family really enjoyed this and next time I think I will add fresh spinach.
