Cabbage Sausage Supper Recipe

Ingredients

  • 2 pounds smoked sausage, halved and cut into 3/4-inch slices
  • 1 large onion, cut into eighths
  • 1 medium head cabbage, chopped
  • 1/2 cup water
  • 1 pound carrots, cut into 1/2-inch slices
  • 5 medium potatoes, peeled and cut into 3/4-inch cubes

Directions

  • In a Dutch oven or soup kettle, cook sausage and onion over medium heat until sausage is lightly browned and onion is tender; drain. Add the cabbage and water. Cover and cook on low for 10 minutes. Stir in the carrots and potatoes. Cover and cook for 25-30 minutes or until the vegetables are tender. Yield: 12 servings.

Nutritional Analysis: One 1-1/4 cup serving (prepared with reduced-fat smoked sausage) equals 190 calories, 4 g fat (1 g saturated fat), 34 mg cholesterol, 675 mg sodium, 28 g carbohydrate, 4 g fiber, 13 g protein. Diabetic Exchanges: 2 starch, 1 lean meat.

I make this recipe a few times a month not only because it's super cheap but my husband constantly asks for it. I'll only be making it more and more now that the cold weather is upon us. I had to resist the urge to add ingredients the first time I made it and I'm sure glad I did. Perfect as is!

My family loved this. I used ground bulk country sausage instead because that's what I had on hand. Everything else came fresh out of the garden. Quick and easy!

Fabulous and super easy. I had some leftover steamed cabbage and potatoes in the refrigerator, so I reduced the quantities in the recipe and added the leftovers at the end to get hot. The flavor seeped into the leftovers as much as the fresh vegetables. This will become a staple on our table. Thank you for sharing this great recipe.

This is really good and easy. I ended up putting 7 potatoes in and 2 lbs of carrots (they were needing to be used up) and it was still very yummy. Will be making this at least once a month.

this is one of my childhood favorite dinners. mom called it new england boiled dinner. the only thing she used was cabbage, potatoes and sausage. i do the same except use turkey sausage and i steam the dinner. i try to make every dinner as healthy as i can and i add carrots if i have them on hand.
