Cabbage Roll Casserole Recipe

Ingredients

  • 2 pounds ground beef
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 cans (15 ounces each) tomato sauce, divided
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon rubbed sage
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups cooked rice
  • 4 bacon strips, cooked and crumbled
  • 1 medium head cabbage (2 pounds), shredded
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese

Directions

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in one can of tomato sauce and seasonings. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Stir in rice and bacon; heat through. Remove from the heat.
  • Layer a third of the cabbage in a greased 13-in. x 9-in. baking dish. Top with half of the meat mixture. Repeat layers; top with remaining cabbage. Pour remaining tomato sauce over top.
  • Cover and bake at 375° for 45 minutes. Uncover; sprinkle with cheese. Bake 10 minutes longer or until cheese is melted. Let stand for 5 minutes before serving. Yield: 12 servings.

Nutritional Analysis: 1 serving equals 230 calories, 8 g fat (4 g saturated fat), 44 mg cholesterol, 620 mg sodium, 18 g carbohydrate, 3 g fiber, 20 g protein. Diabetic Exchanges: 3 vegetable, 2-1/2 lean meat, 1/2 fat.

Great recipe!!! I added 1/2 tsp of crushed red pepper and a I increased the amount of spices but not by a measurable amout...I also used an extra clove of garlic and and a bit more tomato sauce and mozzarella...FANTASTIC!!!

I thought this was amazing!!! I also added 1/2 tsp of crushed red pepper because we like a little "zing" and an extra clove of garlic...also, I used a smidgen more tomato sauce as well as mozzarella...one question, if anyone can reply, the cabbage was a tad crunchy...

This is great. Use packaged shredded cabbage to speed the process. I think it works better.

I have made this several times for my family. I have used ground turkey in place of the ground beef with no problems. I do leave out the thyme, sage and bacon. I also cheat and buy a bag of shredded coleslaw mix with carrots and red cabbage, works excellent and is a big time saver. I also add a can of diced tomatoes to the meat mixture. I don't like using tomato sauce for the top. Instead I've used V8 juice or tomato juice. I may have to try spicy V8 as another has suggested. Either way every time I make this it's never enough for my family, it gets devoured every time.

Tasted just like a cabbage roll without all the fuss and muss of cooking cabbage leaves and rolling. This does need a bit more in the spice department though.

This is a great and easy recipe! The only thing I will do differently next time is use three cans of tomato soup. The mozzarella adds so much to this!!

I'd make the recipe again, but with some changes. Basically it's quite good, but I didn't like the can of tomato sauce poured over the top. Like someone else did, I think I'd use some tomato soup, as the recipe I use for cabbage rolls is from an old Campbell's soup cookbook and is made with tomato soup which i spice up a little bit with liquid smoke. The stark, unseasoned taste of tomato sauce just isn't appetizing when you take a bite of this casserole, but underneath, the dish is juicy with the cabbage....especially noticeable when it's cooled down and has set for awhile.... and tastes very good. Also, I forgot to add about a fourth of the cabbage (left it in my food processor by mistake), and there was plenty of cabbage in the dish. I'd cut down on the amount of cabbage the next time I make it. A friend who eats dinner with us a lot commented that it tasted bland after the first bite, and I agree. It's all a matter of opinion.....some love it as is, I think it needs some tweaking to suit my tastes better.

For extra flavor, I use Spicy V-8 Juice in a 12 oz can and omit one tomato sauce. Wonderful recipe!

Make this again and every time i make it gets better!Idid do the cabbage in the microwave and it was perfect after baking it! Made for our house and made some to take to my son and wife!

Wonderful recipe! I never thought I would be a lover of cabbage, but this dish was so easy to prepare and came out so well. My husband requests it all the time and even my 4 year old daughter liked it!

This will be the second time that i will made this and it does make alot so i bought some to work and all the girls wanted the receipe. I did find that it has to cook longer cause my cabbage was not soft enough but i think i will do like a other and do the cabbage in the micowave and get it cooked some. I used hunts spicy sauce and that has tons of favor. other wise i did the receipe to a tea. thanks for sharing:)

We really like cabbage rolls but they are so much work. I thought this would have the same great flavor with less effort. We were both disappointed. I'm glad I only made half the recipe.

This was very good. I made a few changes based on what I had on hand, using tomato soup instead of sauce (I also added it every layer), and I used a mixed shredded italian cheese instead of just mozzerella. It got rav reviews, though I think some sauerkraut will give it some extra kick next time. I halved the recipe, and it was enough for two nights of dinners, plus one lunch, for my husband and myself. Very yummy.

I pour sauerkraut over the top and instead of adding the bacon in I lay several uncooked slices across the top. Cook covered for the first half then uncover. Simple delicious and easy!

I made this tonight for my husband and myself. Instead of shredding the cabbage, I peeled off the leaves, microwaved them until tender, and layered them whole, lasagna-style. It worked out great, and really made us think of cabbage rolls. As my husband says, "It's a keeper!"

This is an excellent recipe. I prepared half the recipe for my husband & I and baked in an 11"X7" pan. Does anyone know if the leftovers can be frozen successfully?

This was great! I also added a can of Sauerkraut to the raw cabbage and it gave it some added "german" flavor. A definite repeat!

I've made this dish twice. It's one of my favorites of all the TOH recipes that i've tried. I add a little hot sauce on mine. Great recipe!
