My husband and I look forward to a hot bowl of oatmeal on cold winter mornings. This sweet version of oatmeal is so good we could eat it almost every day!

Butterscotch Oatmeal Recipe
  • Prep/Total Time: 20 min.
  • Yield: 3-4 Servings

Ingredients

  • 1-3/4 cups milk
  • 1/2 cup packed brown sugar
  • 1 egg, lightly beaten
  • 1 cup quick-cooking oats
  • 1 tablespoon butter or margarine

Directions

  • In a saucepan over medium heat, combine milk, brown sugar and egg. Cook, stirring constantly, for 5-7 minutes or until mixture boils. Add oats; cook and stir for 1 minute. Remove from the heat. Add butter; cover and let stand for 3-5 minutes. Yield: 3-4 servings.

Nutritional Facts 1 serving (1 cup) equals 290 calories, 9 g fat (5 g saturated fat), 75 mg cholesterol, 108 mg sodium, 45 g carbohydrate, 2 g fiber, 8 g protein.

Why not an egg?

We really like this oatmeal. I do half the sugar and it is still plenty sweet. I also add about a quarter cup more oatmeal so it is a little bit thicker. I want to try it with apples in the fall, maybe raisins too.

super yummy...and yes the egg makes a difference. The creamy texture is very soothing and a welcome treat on cold mornings; a soothing treat; or a simple comfort food when my little 1's are under the weather. We don't use pre-packaged food in our diet, so the brown sugar was not an issue for me. There are many ways to cut down on extra sugars in 1's diet without denying one's self the yumminess of brown sugar. ;-) Just my take on it, to each their own.

Way too much sugar and why an egg? Just put a little brown sugar and a dab of butter on your bowl of oatmeal instead. Same butterscotch flavor. Have an egg on the side!

Just as a note to a previous review. The term butterscotch is usually given to things that are sweetened with brown sugar.Brown sugar is the main ingredient in 'butterscotch' recipes..You are probably referring to the artificial butterscotch flavoring most people are used to.

I was out of instant oatmeal and my kids wanted oatmeal.This recipe was so go and simple I had everything on hand. I will never need to buy expensive instant oatmeal again.

Wonderful! if you like raisins or apples you can add them too. Don't know where the author got the term Butterscotch in the title cuz nothing in this recipe is like butterscotch but it is really good! Might try less brown sugar as oatmeal is very sweet.
