Butternut Squash Salad Recipe

Ingredients

  • SALAD:
  • 1 lb butternut squash, peeled, halved lengthwise, seeded, and cut into 1/2 -inch slices
  • 1 tablespoon olive oil
  • 1/4 cup low sodium chicken broth
  • 1 tablespoon fresh sage, snipped
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper
  • 6 cups torn salad greens
  • 1 medium apple, cored and cut into bite-size pieces
  • 1/2 red onion, thinly sliced
  • 2 ounces goat cheese, crumbled
  • SAGE VINAIGRETTE:
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon fresh sage, snipped
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper

Directions

  • In large skillet, heat oil over medium. Cook squash 5 minutes, or until golden brown, turning occasionally.
  • Add broth, sage, salt, and pepper. Cook, covered, 5 additional minutes, or until squash is tender, turning once or twice.
  • In large salad bowl, toss greens with apple and onion.
  • Drizzle vinaigrette over greens and toss gently.
  • Remove squash with slotted spoon and place on salad greens. Sprinkle with cheese and serve.
  • Sage Vinaigrette: In screw-top jar, combine balsamic vinegar, olive oil, sage, salt, and pepper. Cover and shake well.

This recipe will likely make it onto my Thanksgiving menu! It was delicious and quick to make. I do recommend doubling the dressing amount - but we like dressing.
