Heck Yes, I'll make these again!!! Just pulled the first batch out of the oven 5 min. ago and they smell/taste WONDERFUL! Just like a shortbread. Didn't have mint so I used the hint from 'maggieaw' and used anise. Just the right thing to do. Thanx to her for that!

Wow! I just finished making these great cookies....FANTASTIC! Pressed and covered with gold. I wanted them to look like the gold coins the Leprechaun left behind. Can't wait to see what the kids think!

I am on my way into the kitchen, now. Have all the ingredients on hand. Since today is St. Patrick's Day I will use green sugar. For Easter I might use a variety of sugars in pastel, spring colors.
