My husband and I enjoy serving this tasty chicken to company as well as family. It looks like we fussed, but it's really fast and easy to fix. I found the recipe years ago and have made this dish many times. It usually prompts recipe requests.

Bruschetta Chicken Recipe
  • Prep: 10 min. Bake: 30 min.

Ingredients

  • 1/2 cup all-purpose flour
  • 2 eggs, lightly beaten
  • 1/4 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 1 tablespoon butter, melted
  • 2 large tomatoes, seeded and chopped
  • 3 tablespoons minced fresh basil
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • Place flour and eggs in separate shallow bowls. In a third bowl, combine bread crumbs and cheese. Dip chicken in flour, then eggs; coat with bread crumb mixture.
  • Place in a greased 13-in. x 9-in. baking dish. Drizzle with butter. Bake, uncovered, at 375° for 25-30 minutes or until a meat thermometer reads 170°.
  • In a small bowl, combine the remaining ingredients. Spoon over the chicken. Return to the oven for 3-5 minutes or until tomato mixture is heated through. Yield: 4 servings.

Nutritional Analysis: 1 topped chicken breast equals 380 calories, 14 g fat (5 g saturated fat), 185 mg cholesterol, 589 mg sodium, 19 g carbohydrate, 2 g fiber, 42 g protein.

Have made a number of times and glad you had the recipe on line since we are on vacation in FL and did not have it with us. We have to entertain and thought this would be the best to serve.

This was delicious! My entire family loved it and it looked like it came from a fancy restaurant. To make things even easier, I used chopped basil and minced garlic from the jar. My son doesn't even like tomatoes, but with this combo, he actually ate it all up! Thank you for this easy and delicious recipe, it's a keeper!

I made this last night for my husband and I. He LOVED it! I also really enjoyed it. The only change I made was I used a three-cheese Italian mix instead of just Parmesan. I will definitely make this again!

Almost forgot to add,with this recipe I made a side dish of zucchini,sliced 1/4 inch thick,coated with egg,coated with flour,browned in olive oil,added Italian style diced tomatoes for 15 minutes.awsome

This was good,I made a few changes.I don't care for basil so put half in.Next time just 1 tbls,and a little less salt.It was a little salty.Also watch during baking,With nothing in the pan started to burn the bottom a little.I used and liked diced Italian tomatoes,easy open a can and done.Thanks was good

I've made this recipe many times! Goes well with fetticine alfredo, another hit with Taste of Home! Bruschetta chicken is a treat to make for dinner guests. This chicken is moist and blends well with the garlic and tomatoes and fresh basil! My kids love this recipe!
