Brownie Cupcakes Recipe
  • Prep: 15 min. Bake: 20 min. + cooling
  • Yield: 4 Servings

Ingredients

  • 1/4 cup semisweet chocolate chips
  • 1/4 cup butter, cubed
  • 1 egg
  • 1/4 cup sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped pecans

Directions

  • In a microwave, melt chocolate chips and butter; stir until smooth. Cool slightly. In a small bowl, beat egg and sugar. Stir in vanilla and chocolate mixture. Gradually add flour; fold in pecans.
  • Fill paper-lined muffin cups two-thirds full. Bake at 325° for 20-25 minutes or until tops begin to crack. Cool for 10 minutes before removing from pan to a wire rack. Yield: 4 servings.

Nutritional Facts 1 cupcake equals 297 calories, 21 g fat (10 g saturated fat), 83 mg cholesterol, 99 mg sodium, 26 g carbohydrate, 2 g fiber, 4 g protein.

Loved the top of the cupcakes but the rest lacked taste in my opinion...not chocolatey enough...prefer my oven baked brownies.

I made a couple changes. I have a diabetic sister in law. I substituted Splenda for the sugar and made in mini muffin pan and made 12 instead of 4. I tried one and thought they were pretty good and think she will be extremely happy with this little treat.

It only makes 4 cupcakes because it came from Cooking for Two magazine. Just double the recipe.

these are great cupcakes -fast and easy. You might like to try these too. 18 oz. chocolate cake mix 3 oz. package cook and serve chocolate pudding mix 1/2 cup chocolate chips 1/2cup chopped walnuts In a saucepan cook pudding according to package directions. Pour dry cake mix into hot pudding-mix well.(batter will be thick) Pour into greased 9x13-inch baking pan. Sprinkle nuts and chips over top evenly. Bake in 350^ for 30 minutes. no longer. Cut into squares when cool.
