Brown Sugar Oat Muffins Recipe

Ingredients

  • 1 cup old-fashioned oats
  • 1 cup whole wheat flour
  • 3/4 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup 2% milk
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract

Directions

  • In a small bowl, combine the first six ingredients. In another small bowl, beat the eggs, milk, oil and vanilla. Stir into the dry ingredients just until moistened.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-17 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.

Nutritional Facts 1 serving equals 192 calories, 7 g fat (1 g saturated fat), 37 mg cholesterol, 189 mg sodium, 30 g carbohydrate, 2 g fiber, 4 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

Excellent recipe! The old-fashioned oats gave the muffins a bit of texture, which was nice---almost like nuts. The only change I made was to add a teaspoon of nutmeg. These are great plain, or with a bit of butter or jam. I will be making these again, definitely!

This is a real muffin recipe. So many muffin recipes are more like cake. I've tried close to twenty recipes without much luck. This one is great because it is the right "muffin" consistency and flavor. I made it with my son who loved the muffins and was very proud. We made it exactly as the recipe called, but I think it could be altered easily with fruit or nuts, etc. That said, this one doesn't need altering. Alas, I have found muffin happiness!

These were delicious. I added a teaspoon of cinnamon to the dry ingredients. Next time I will add some chopped walnuts and some raisins.

I can't wait to try these! If you don't like the wheat flour, though, just replace it with the same amount of all-purpous flour. the wheat flour just makes it healthier.

Omgosh, were these good! Very moist! I did add some cinnamon..which gave them a great flavor! I will definitely make these again.

All 3 of my children thought that this was a fantastic treat for morning tea! And they didn't have any idea that it was actually healthy for them!

I didn't care for it myself, but I can always taste the whole wheat. I can say, however, that not a one was left at the snack table I cook for every Sunday. For those who like this type of muffin, I'd have to say it's a good recipe.

These are delicious with almost a honey-like taste. But we thought they were a little "plain"...will add raisins and nuts next time.

It's hard to find a whole wheat flour recipe that tastes good...but this one is outstanding! Still very moist, baked up beautifully! If you are watching the fat, no need to add the butter, it's that good!
