Brown Sugar-Glazed Salmon Recipe

Ingredients

  • 1 salmon fillet (1 pound)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons brown sugar
  • 1 tablespoon reduced-sodium soy sauce
  • 4 teaspoons Dijon mustard
  • 1 teaspoon rice vinegar

Directions

  • Cut salmon widthwise into four pieces. Place in a foil-lined 15-in. x 10-in. x 1-in. baking pan; sprinkle with salt and pepper. Bake, uncovered, at 425° for 10 minutes.
  • Meanwhile, in a small saucepan, combine the brown sugar, soy sauce, mustard and vinegar. Bring to a boil. Brush evenly over salmon. Broil 6 in. from the heat for 1-2 minutes or until fish flakes easily with a fork. Yield: 4 servings.

Nutritional Analysis: 1 serving equals 256 calories, 13 g fat (2 g saturated fat), 67 mg cholesterol, 496 mg sodium, 11 g carbohydrate, trace fiber, 23 g protein. Diabetic Exchanges: 3 lean meat, 1 starch, 1/2 fat.

This is so good! I am not a salmon fan (too fishy for me), but i'm trying to incorporate it into my diet. This recipe makes it easy. Delicious!!

Our favorite salmon dish - simple, elegant and delicious! We prefer broiling without baking first to avoid overcooking. Place 4" from heat; broil 7-9 min, spooning heated glaze over during final min. This is a great recipe for converting non-salmon eaters!

I've made this dish many times and it continues to be a family favorite. Salmon is a documented super food and I serve it once a week so I'm always on the look out for different ways to prepare it. This recipe is quick and easy to prepare, but results in high praises at the dinner table. I generally serve it with "Roasted Dill Potatoes" also found on this web site and steamed broccoli . This is better than anything I've ever eaten in a restaurant!

Since I found this recipe last month it has now become my favorite sauce for salmon. It replaces the 1999 Quick Cooking favorite salmon recipe with sauce that included butter.

I didn't have the dijon mustard so I just added regular mustard and honey and it turned out great.
