Brown Rice Stuffing Recipe

Ingredients

  • 1 cup long grain brown rice
  • 21/2 cup low sodium chicken broth
  • 1 tablespoon vegetable oil
  • 2 cup chopped celery
  • 1 cup fresh chopped onion
  • 4 ounces canned mushroom slices, drained
  • 8 ounces sliced water chestnuts, drained
  • 1/2 teaspoons fresh thyme
  • 1/2 teaspoons dried rosemary
  • 0.0625 teaspoons black pepper
  • 1/4 teaspoons salt
  • 1/2 teaspoons ground sage

Directions

  • In saucepan, over medium heat combine rice and broth. Bring to boil, stirring occasionally.
  • Cover, reduce heat and simmer 45 to 50 minutes until all liquid is absorbed.
  • Add oil to separate saucepan, heat to medium.
  • Add celery, onions, and mushrooms. Saute until onions are tender, stirring frequently.
  • Stir water chestnuts into vegetables.
  • Add thyme, rosemary, salt, pepper, and sage. Cook over low heat 4 minutes, stirring frequently.
  • Toss in rice and serve.
