Broiled Orange Roughy Recipe

Ingredients

  • 1/4 cup butter, melted
  • 1/4 cup lemon juice
  • 1/4 cup soy sauce
  • 1 teaspoon garlic powder
  • 1-1/2 pounds orange roughy, red snapper or haddock fillets
  • Paprika

Directions

  • In a large resealable plastic bags, combine the butter, lemon juice, soy sauce and garlic powder; add fish. Seal bag and turn to coat.
  • Marinate for 10 minutes.
  • Drain and discard marinade. Place fish on a broiler pan. Broil 3-4 in. from the heat for 5 minutes on each side or until fish flakes easily with a fork. Sprinkle with paprika. Yield: 4 servings.

Nutritional Facts 1 orange roughy fillet (prepared with reduced-sodium soy sauce) equals 189 calories, 7 g fat (4 g saturated fat), 50 mg cholesterol, 489 mg sodium, 5 g carbohydrate, trace fiber, 26 g protein. Diabetic Exchanges: 4 lean meat, 1 fat.
