Broccoli and Mushrooms Recipe

Ingredients

  • 1 tablespoon olive oil
  • 4 cups fresh mushroom slices
  • 1 medium shallot, sliced
  • 1/4 cup sherry cooking wine
  • 4 cup fresh broccoli florets, about 1 bunch
  • 1/2 teaspoons kosher salt
  • 1/2 cup low sodium chicken broth
  • 1/4 teaspoons freshly ground black pepper

Directions

  • In large pot, heat oil over medium. Add mushrooms and shallots, cook 10 minutes or until mushrooms are golden.
  • Add sherry and cook 2 minutes, or until liquid absorbs, stirring often.
  • Add broccoli, salt, and broth. Bring to boil, cover, and simmer for 5 minutes or until broccoli is crunchy but soft.
  • Sprinkle with pepper. Serve.
