I do a lot of catering, and this easy rice casserole always gets rave reviews from clients as well as friends and family. It is loaded with turkey, broccoli and water chestnuts. I'm asked for the recipe over and over. —Marcene Christopherson Miller, South Dakota

My family found this dish to be very tasty. There are a few recommendations I would make, however. As another reviewer mentioned, the rice does not necessarily cook all the way through depending on what type/brand you use. Next time I will cook the rice prior to assembling in the baking dish. Additionally, the frozen broccoli came out with a rubbery texture which nobody cared for. Perhaps I will use fresh and cook prior to baking as well. Overall great flavor. The water chestnuts add a nice element to the casserole. Will make again...

this was great but next time I sill cook the rice mix first. It took forever in the oven and the rice was still not soft

Made this recipe with wild turkey breast - it was wonderful! Now one of our favorite dishes. Will make often.

Family loved the recipe. I used Garden flavored rice as that is what I had and it worked just fine.

Just made this recipe tonight with leftover turkey from Thanksgiving. It came out great! Even my picky 3 year old daughter ate it. I substituted wild rice instead of the rice called for in the recipe and it was really good.

Love this recipe and have made it a lot of times. I don't add the water chestnuts..which I do love but husband does not. It just takes longer to cook then the above time. Also use reg or light mayo..do not use Mircle Whip..does not work in this recipe.

This is my kind of casserole!! Being from the South, I love casseroles that have cream of something soups and mayo in them. Definitely not on the light side, but certainly worth eating as long as you don't go too overboard. This was quick and easy to throw together and it tasted great! I didn't have any water chestnuts on hand but I will definitely add them next time - my girls love their crunch. Thanks for a great lazy Sunday afternoon meal!
