Broccoli Tomato Chicken Recipe

Ingredients

  • 2 each boneless skinless chicken breasts
  • Pinch black pepper
  • 2 tablespoons canola oil, divided
  • 2 small onions, sliced
  • 2 cups fresh broccoli florets
  • 1 medium tomatoes, cut into wedges
  • Pinch salt

Directions

  • Cut chicken into bite-size pieces and toss with 1 tablespoon oil.
  • Add to large skillet, cook over high heat, stirring frequently, 5 minutes or until just tender.
  • Reduce heat to medium. Add remaining oil and onion, cook 2 minutes.
  • Add broccoli and tomato. Sprinkle with salt and pepper.
  • Cover and cook 4 minutes or until vegetables are crisp, but tender.
