Broccoli Salad Recipe
  • Prep: 15 min. + chilling
  • Yield: 2 Servings

Ingredients

  • 1-1/2 cups fresh broccoli florets
  • 3/4 cup shredded cheddar cheese
  • 4 bacon strips, cooked and crumbled
  • 1/4 cup finely chopped onion
  • 3 tablespoons mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar

Directions

  • In a bowl, combine the broccoli, cheese, bacon and onion. In another bowl, whisk the mayonnaise, vinegar and sugar. Pour over broccoli mixture and toss to coat. cover and refrigerate for at least 1 hour before serving. Yield: 2 servings.

Nutritional Facts 1 serving (3/4 cup) equals 420 calories, 35 g fat (13 g saturated fat), 63 mg cholesterol, 585 mg sodium, 12 g carbohydrate, 2 g fiber, 15 g protein.

I made this salad last night for company. Initally I was concerned because the dressing seemed quite minimal compared to other broccoli salads I had eaten in the past. I used white balsamic vinegar that I had on hand. The dish was not slathered in mayonnaise yet the flavour was fantastic and. I was very pleased with the finished product! This is now in my KEEPER file. Love thiks recipe.

REC: Bodacious Broccoli Salad

Can't find the original post, so reposting for the newbies!

This is our favorite broc salad. :)
It's simply delicious!

Bodacious Broccoli Salad

12 servings

Make at least 2 hours in advance to allow flavors to meld.

8 slices bacon
2 heads fresh broccoli, chopped
1-1/2 cups sharp Cheddar cheese, shredded
1/2 large red onion, chopped
1/4 cup red wine vinegar
2 tablespoons white sugar
2 teaspoons ground black pepper
1 teaspoon salt
2/3 cup mayonnaise
1 teaspoon fresh lemon juice

Directions
1 Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.

2 In a large bowl, combine broccoli, cheese, bacon and onion.

3 Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and
refrigerate until ready to serve.

I usually use apple cider vinegar in mine. Other than that at our house we love this recipe, it isnt a BBQ without it.

I added 1/3 cup of raisins to the recipe, which gave it some extra texture and sweetness. This receipe is a winner and so easy to make.

This our favorite salad and very healthy, but I also add about 3T of horseradish sauce to the mayonnaise and vinegar & sugar and it gives it a little taste, very good.
