Broccoli-Chicken Cups Recipe

Ingredients

  • 2 cups (8 ounces) shredded cheddar cheese, divided
  • 1-1/3 cups crisp rice cereal
  • 1 cup cubed cooked chicken
  • 2 tubes (10 ounces each) refrigerated biscuits
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 3 cups frozen chopped broccoli, cooked and drained

Directions

  • Place biscuits in greased muffin cups, pressing dough onto the bottom and up the sides. Add 1 tablespoon cheese and cereal to each cup.
  • In a large bowl, combine the chicken, soup and broccoli; spoon into each muffin cup. Bake at 375° for 20-25 minutes or until bubbly. Sprinkle with remaining cheese. Yield: 10-12 servings.

Nutritional Facts 1 serving (1 each) equals 205 calories, 11 g fat (5 g saturated fat), 31 mg cholesterol, 560 mg sodium, 16 g carbohydrate, 1 g fiber, 10 g protein.

Do you measure the broccoli frozen or after cooked? Everyone enjoyed these; would try putting Durkee FF onions on top next time for alittle more flavor.

I added even more flavoring and they were really bland and dry.

I substituted mozzarella for the cheddar, since it was what I had in the fridge, and used fresh broccoli, lightly steamed. I also had the larger Grands biscuits which meant less cheese & cereal in the bottoms of the cups (otherwise there would not have been enough room in the cups for filling ~ haha). I don't know what the crispy rice does for the recipe...it wasn't noticeable at all when eating these.

crisp rice is the same as rice kripys and if freezeing do it after they are cooked

I really enjoyed these. Thank you so much for sharing. I didn't have the rice crispies so I omitted them. I will try them next time. What i loved about this was that it was all things I already had in my house. A delicious dinner on the fly! ty

I cut the fat in recipe by using reduced-fat biscuits, cheese, and cream soup. Great!

I am trying to figure out why the cereal...when I made this I replaced two things...the mushroom soup with chicken and the cereal with french fried onions.
