Breakfast Parfaits Recipe

Ingredients

  • 2 cups pineapple chunks
  • 1 cup fresh or frozen raspberries
  • 1 cup (8 ounces) vanilla yogurt
  • 1 cup sliced ripe banana
  • 1/2 cup chopped dates or raisins
  • 1/4 cup sliced almonds

Directions

  • In four parfait glasses or serving dishes, layer the pineapple, raspberries, yogurt, banana and dates. Sprinkle with almonds. Serve immediately. Yield: 4 servings.

This is delicious. Instead of dates & raisins & nuts i used granola on top. My son didn't care so much for the pineapple, so for him i skip that but this is a delicious healthy breakfast & snack. Yummy!

I think this recipe is absolutely wonderful especially for healthy afterschool snacks. I bet even teenage girls would eat this for breakfast. Can't wait to try with my grandchildren. So simple, I don't know why I didn't think of this!
