Bread Pudding

3 eggs
3 cans (12 ounces each) evaporated milk
1-1/4 cups sugar
1/4 cup butter, melted
1/2 to 1 cup raisins
1 teaspoon ground cinnamon
2 teaspoons vanilla extract
1/2 teaspoon salt
1 loaf (1 pound) bread, cut into cubes

In a large bowl, beat eggs. Add milk, sugar, butter, raisins, cinnamon, vanilla
and salt; mix well. Add bread cubes; stir gently. Pour into a greased 13-in. x
9-in. baking dish. Bake at 325° for 50-60 minutes or until a knife inserted
near the center comes out clean. Serve warm or cold. Store in the refrigerator.


Yield: 12-16 servings.
