Braised Parsnips and Winter Vegetables Recipe

Ingredients

  • Olive oil cooking spray
  • 1/4 cup minced onion
  • 2 teaspoons minced garlic
  • 2 medium fresh sliced parsnips
  • 2 medium carrots, sliced
  • 1 cup julienned celery root or celery
  • 1 cup shredded red or green cabbage
  • 1/2 cup dry red wine or reduced sodium vegetable broth
  • 2 tablespoons packed light brown sugar
  • 1 teaspoon red wine or balsamic vinegar
  • 1 teaspoon ground sage
  • 1/2 teaspoons ground thyme
  • Pinch salt, to taste, optional
  • Pinch black pepper

Directions

  • Coat large skillet with cooking, heat over medium. Add onion and garlic, cook 2 to 3 minutes.
  • Add parsnip, carrots, celery root, and cabbage and cook 4 to 5 minutes.
  • Add broth, brown sugar, vinegar, sage, and thyme into mixture and bring to boil.
  • Lower heat, cover, and simmer 8 to 10 minutes or until vegetables are soft. Sprinkle with salt and pepper.
