Blueberry Jam Recipe
  • Prep: 25 min. + chilling
  • Yield: 64 Servings

Ingredients

  • 1/3 cup thawed apple juice concentrate
  • 1 envelope plain gelatin
  • 5 cups fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cinnamon

Directions

  • Pour the apple juice concentrate into a saucepan; sprinkle with gelatin and allow to soften for several minutes.
  • Meanwhile, in a blender or food processor, finely chop blueberries, 1 cup at a time. Add lemon juice, spices and 2 cups of chopped berries to gelatin; heat over medium-low until gelatin is dissolved. Remove from the heat; stir in remaining berries and mix well.
  • Pour into jars or plastic containers; store in the refrigerator up to three weeks. Yield: 4 cups.

Diabetic Exchanges: One 1-tablespoon serving equals a free food; also 12 calories, 1 mg sodium 0 cholesterol, 3 gm carbohydrate, trace protein, trace fat.

A little sour so added 1 cup of sugar to next batch - much better. To: VickVick - yes this can be canned, water process for 5 mins, DO NOT PRESSURE CAN as that method does not do well with hi acid foods. Good luck.

Made it for Christmas gifts - and kept a bit too ;) The blueberries had a slight bitterness and the apple juice complimented it perfectly. It was NOT too sweet! It freezes well too - very easy recipe!

This sounds like a great recipe - can't wait to try it. Sure, the apple juice concentrate contains sugar, but compared to the vast quantities usually added to jam it's not much at all.

My kids and I pick blueberries every year and were excited to find an easy recipe for jam. Thankfully I only made 1 batch - none of us like the jam. It will go to waste. I think the apple juice gives it sort of a bitter taste. Certainly not 'sweet' like you expect jam to be.

This is a great recipe. I did water bath the jars so that I would have the product longer than a few weeks in the refrigerator. After the fact I did add a small amount of Stevia to enhance the flavor. I am going to try this with other fruit.

Why not substitute "bottled" apple juice with no added sugars instead of the concentrate?

You can freeze this if you want to make more or if you don't think you can eat it all in 3 weeks. Easy to thaw and just as good!

I am not sure about the apple juice concentrate for a diabetic. As far as I know they are packed with sugar of some sort. I would prefer a recipe using Splenda. Be careful and check the concentrate before assuming it is sugar free.

This is a good recipe and I enjoyed it. However, it is NOT sugar-free, so diabetics beware. Apple juice concentrate has PLENTY of sugar in it. The very word "concentrate" for fruit juices denotes "sugar added" because sugar is used in the concentration process to aid in drying/evaporation. That is why frozen OJ is so sweet.

I agree that to say this jam is "cholesterol free" is redundant. I found it to be too sweet due to the apple juice concentrate.

Cholesterol is found in animal products and is not included in jams. Sugar-free blueberry jam sounds good, but it is silly to tout it as cholesterol-free.
