Blueberry Jam Recipe
  • Prep: 25 min. + chilling
  • Yield: 64 Servings

Ingredients

  • 1/3 cup thawed apple juice concentrate
  • 1 envelope plain gelatin
  • 5 cups fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cinnamon

Directions

  • Pour the apple juice concentrate into a saucepan; sprinkle with gelatin and allow to soften for several minutes.
  • Meanwhile, in a blender or food processor, finely chop blueberries, 1 cup at a time. Add lemon juice, spices and 2 cups of chopped berries to gelatin; heat over medium-low until gelatin is dissolved. Remove from the heat; stir in remaining berries and mix well.
  • Pour into jars or plastic containers; store in the refrigerator up to three weeks. Yield: 4 cups.

Diabetic Exchanges: One 1-tablespoon serving equals a free food; also 12 calories, 1 mg sodium 0 cholesterol, 3 gm carbohydrate, trace protein, trace fat.

Being diabetic and loving blueberry jam, this was a great recipe that allows me to eat my favorite things! Thanks for a great recipe! ( and ideas how to use with other fruits!)

Made it for Christmas gifts - and kept a bit too ;) The blueberries had a slight bitterness and the apple juice complimented it perfectly. It was NOT too sweet! It freezes well too - very easy recipe!

This sounds like a great recipe - can't wait to try it. Sure, the apple juice concentrate contains sugar, but compared to the vast quantities usually added to jam it's not much at all.

My kids and I pick blueberries every year and were excited to find an easy recipe for jam. Thankfully I only made 1 batch - none of us like the jam. It will go to waste. I think the apple juice gives it sort of a bitter taste. Certainly not 'sweet' like you expect jam to be.

This is a great recipe. I did water bath the jars so that I would have the product longer than a few weeks in the refrigerator. After the fact I did add a small amount of Stevia to enhance the flavor. I am going to try this with other fruit.

I haven't tried it yet, but I would definitely not use the apple juice - as I don't like too sweet products.

Why not substitute "bottled" apple juice with no added sugars instead of the concentrate?

You can freeze this if you want to make more or if you don't think you can eat it all in 3 weeks. Easy to thaw and just as good!
