Blueberry-Citrus Mini Loaves

Ingredients
1 cup all-purpose flour
1 cup whole wheat pastry flour
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 egg
3/4 cup orange juice
1/4 cup canola oil
1 tablespoon grated orange peel
1/2 cup fresh
or
frozen blueberries
1/4 cup chopped pecans
Directions
In a large bowl, combine the flours, sugar, salt and baking soda. In
a small bowl, whisk the egg, orange juice, oil and orange peel. Stir
into dry ingredients just until moistened. Fold in blueberries and
pecans.
Transfer to two 5-3/4-in. x 3-in. x 2-in. loaf pans coated with
cooking spray. Bake at 350° for 40-45 minutes or until a
toothpick inserted near the center comes out clean. Cool for 10
minutes before removing from pans to wire racks. Yield: 2 loaves (6
slices each).
