Blueberry Chicken Salad Recipe
  • Prep: 15 min. + chilling
  • Yield: 4 Servings

Ingredients

  • 2 cups fresh blueberries
  • 2 cups cubed cooked chicken breast
  • 3/4 cup chopped celery
  • 1/2 cup diced sweet red pepper
  • 1/2 cup thinly sliced green onions
  • 3/4 cup (6 ounces) lemon yogurt
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon salt
  • Bibb lettuce leaves, optional

Directions

  • Set aside a few blueberries for garnish. In a large bowl, gently combine the chicken, celery, red pepper, onions and remaining blueberries. Combine the yogurt, mayonnaise and salt; drizzle over chicken mixture and gently toss to coat.
  • Cover and refrigerate for at least 30 minutes. Serve on lettuce-lined plates if desired. Top with reserved blueberries. Yield: 4 servings.

Nutritional Facts 1 serving (1 cup) equals 277 calories, 11 g fat (2 g saturated fat), 60 mg cholesterol, 441 mg sodium, 21 g carbohydrate, 3 g fiber, 23 g protein.

Yum! This is one of our summertime favorite meals. I serve it with a roll on the side for a delicious light dinner. I like a sweeter taste, so I don't add all the salt it calls for.
