Black Bean Chicken with Rice Recipe

Ingredients

  • 3 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon pepper
  • 1/4 teaspoon salt
  • 4 boneless skinless chicken breast halves (4 ounces each)
  • 2 teaspoons canola oil
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 cup salsa
  • 2 cups cooked brown rice

Directions

  • Combine the chili powder, cumin, pepper and salt; rub over chicken. In a large nonstick skillet coated with cooking spray, brown chicken in oil on both sides. Stir in the beans, corn and salsa. Cover and cook over medium heat for 10-15 minutes or until a meat thermometer reads 170°.
  • Slice chicken; serve with rice and bean mixture. Yield: 4 servings.

Amazingly fast and easy meal! And tasty! One reviewer mentioned the chicken was dry; just make sure the breasts are all pounded or cut to a thickness of less than 2". It would be great with some added fresh, chopped tomato and cilantro. I wish dinner was this easy every night!

This was delicous! The kids couldn't handle the spice so I had to tone down the chili the second time around. I paired it with long grain and wild rice instead.

Very flavorful! I also noticed that it was a little dry so I added a can of diced tomatoes and it turned out wonderful!

This was very tasty and I would make it again. However, the chicken took about 25-30 minutes to cook through after adding the other ingredients, and because it took so long, the bean/corn/salsa mixture burned to the bottom of the non-stick pan and was very dry. I'd do it differently next time. But 5 stars for flavor.
