Ingredients

  • 1 pound lean ground beef (90% lean)
    XKick-up the flavor

    With Johnsonville Italian Sausage.

  • 1 large green pepper, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 cans (14-1/2 ounces each) reduced-sodium beef broth
  • 2 cans (14-1/2 ounces each) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 cup frozen corn
  • 1/4 cup tomato paste
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon pepper
  • 2-1/2 cups uncooked spiral pasta
  • 1/2 cup shredded Parmesan cheese

Directions

  • In a large saucepan, cook the beef, green pepper and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain.
  • Stir in the broth, tomatoes, tomato sauce, corn, tomato paste, Italian seasoning and pepper. Bring to a boil. Stir in pasta. Return to a boil. Reduce heat; cover and simmer for 10-12 minutes or until pasta is tender. Sprinkle with cheese. Yield: 8 servings.

Nutritional Facts 1-1/3 cups equals 280 calories, 7 g fat (3 g saturated fat), 41 mg cholesterol, 572 mg sodium, 35 g carbohydrate, 4 g fiber, 20 g protein. Diabetic Exchanges: 2 lean meat, 2 vegetable, 1-1/2 starch.

This was a good, hearty soup.

This was a really hearty soup! I made it for lunch with a slice of double fiber wheat bread on the side, but it is definitely dinner-worthy! I put a tiny bit of freshly ground sea salt, parmesan, and mozzarella on top of each person's portion. It was delicious! My husband really loved it. For the pasta, I used the 3-color veggie Wacky Mac pasta. Very good!

I tried this out on my family before deciding whether or not to take to a potluck at work. My family thought this soup was delicious. I had all the ingredients on hand, which is always a plus, and it was very quick to throw together. I cooked the noodles a little too long and, as another reviewer stated, they absorbed more of the liquid than I expected. Next time, I think I'll use Italian-style diced tomatoes just to add a little more zip to the broth. I've always thought that soup tastes better the next day but I don't know that this particular recipe fits that adage.

I accidentally ended up using diced tomatoes with chiles and it turned out great; not bland at all and not too spicey, even my 3-year old and 1-year old loved it!

I don't like soup. But. I loved this. Use ground Italian sausage instead of ground beef. It adds more flavor

We liked this. I used 3 cans of beef broth, omitted the tomato sauce and paste and put one can of the tomatoes in the blender to puree. Will make this again!
