Berry White Ice Pops Recipe
  • Prep: 10 min. + freezing
  • Yield: 10 Servings

Ingredients

  • 1-3/4 cups whole milk
  • 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • 1 package (12 ounces) frozen unsweetened mixed berries, thawed and drained
  • 10 freezer pop molds or 10 paper cups (3 ounces each) and wooden pop sticks

Directions

  • In a small bowl, whisk the milk, honey and vanilla. Evenly divide berries among Popsicle molds or cups. Pour milk mixture over berries. Top molds with holders or insert wooden sticks into cups. Freeze. Yield: 10 pops.

I've got a new batch freezing right now! I upped the amount of honey in them by quite a bit (the last batch was good, but not quite sweet enough) to about 1/4c, and used almond milk this time (the soy milk was fantastic in it last time, but I thought I'd mix it up a little and see which I like best. :)) These come out so pretty and the bonus is that since they're mostly fruit and healthy dairy-free milk, with just a little local wildflower honey per serving, they make a reasonably healthy snack. They'd be deliciously sinful using a bit of real coconut milk, too, I bet. Gotta give that one a try soon.
