Berry Vinaigrette

TIME: Prep/Total Time: 5 min.

Ingredients:

  • 3 tablespoons seedless raspberry jam
  • 2/3 cup vegetable oil
  • 1/3 cup red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Torn salad greens

Directions:

Place jam in a small microwave-safe bowl. Microwave, uncovered, on high for 10-15 seconds or until melted.
    Pour into a jar with a tight-fitting lid. Add the oil, vinegar, salt and pepper; shake well. Serve with salad greens. Refrigerate any remaining vinaigrette. Yield: 3/4 cup.
