Berry Smoothie Pie Recipe
  • Prep: 10 min. + chilling

Ingredients

  • 1 package (.3 ounce) sugar-free strawberry gelatin
  • 1/3 cup reduced-calorie reduced-sugar cranberry juice
  • 3/4 cup (6 ounces) raspberry yogurt
  • 3 cups chopped fresh strawberries
  • 1 reduced-fat graham cracker crust (8 inches)
  • Fat-free whipped topping, optional

Directions

  • In a small microwave-safe bowl, sprinkle gelatin over cranberry juice; let stand for 1 minute. Microwave on high for 40 seconds; stir. Let stand for 1 minute or until gelatin is completely dissolved.
  • In a blender, combine the gelatin mixture, yogurt and strawberries; cover and process until blended. Pour into crust. Refrigerate for 4 hours or until set. Serve with whipped topping if desired. Yield: 6 servings.

Nutritional Facts 1 piece (calculated without whipped topping) equals 194 calories, 5 g fat (2 g saturated fat), 1 mg cholesterol, 174 mg sodium, 34 g carbohydrate, 2 g fiber, 4 g protein. Diabetic Exchanges: 1 starch, 1 fruit.

This was a wonderful recipe. My entire family loved it. Definitely making again. With blackberries and whipped topping, perfect for the 4th of July.

This pie looked perfect when I finished pouring it in the shell. It started setting up right away and I went ahead and chilled it. But upon serving time, the whole thing was nothing but mush. Completely fell apart. It did taste good, though.

Made this for my son who is diabetic. He came over for dinner with his family. Everyone loved it even the kids! It is light and refreshing and the best, it's guilt free. :)
