Beet and Grapefruit Salad Recipe

Ingredients

  • 1-1/2 cups canned sliced beets
  • 1 bay leaf
  • 4 whole cloves
  • 4 each whole allspice
  • 1 each medium grapefruit, sectioned
  • 1 packet Equal

Directions

  • Drain beets, reserving 1/2 cup of liquid.
  • In small saucepan, mix beet liquid, bay leaf, cloves, and allspice.
  • Bring to boil, then reduce heat. Simmer 5 minutes. Let cool to room temperature.
  • In large bowl, place beets and grapefruit.
  • Strain sauce through fine sieve or cheesecloth. Add sweetener and stir to mix well.
  • Pour sauce over beets and grapefruit. Cover and marinate for at least 1 hour. Drain liquid. Serve.
