Ranch dressing mix flavors this fast-to-fix mixture that’s packed with shredded cheese. “This thick dip is made to go with pretzels,” assures Michelle Long of New Castle, Colorado. “It’s one of those snacks that when you start eating it, you can’t stop! This dip can be made with any type of beer, including nonalcoholic beer. I’ve taken it to many parties and am always asked for the recipe.”

Ingredients

  • 2 packages (8 ounces each) cream cheese, softened
  • 1/3 cup beer or nonalcoholic beer
  • 1 envelope ranch salad dressing mix
  • 2 cups (8 ounces) shredded cheddar cheese
  • Pretzels

Directions

  • In a large bowl, beat the cream cheese, beer and dressing mix until smooth. Stir in cheddar cheese. Serve with pretzels. Yield: 3-1/2 cups.

I have made this recipe a couple of times already and everyone loved it. I used a little less cheese (sharp cheddar) and a little more beer to give it a smoother consistency.

I make one very simalar to this. But I use equal parts cream cheese and sour cream. Using a dark beer (gives a good beer flavor) to thin it to a spreadable consistancy. However, it's better if you thin it and then allow it to chill before using, helps thicken it up to a great spreadable dip. We like it best with the pretzel chips. Yummy!

Sorry for being so vague.....8 oz (weight) of shredded cheese = 2 cups (dry measure volume). You can check using a kitchen scale. You may also check the packages of shredded cheese at the grocery store. The small package is 8 oz/2 cups and the larger packages is 12 oz/3 cups.

kimmik22...please check your facts before criticizing the recipe. 8 oz shredded cheese = 8 ounces. Get out your kitchen scale or check the Kraft cheese packages at the grocery store.

I entered this in a Super Bowl Appetizer Contest we had at work and I won 1st place! I wanted something easy to fix and take and this was great! I used sharp cheddar and Miller Light and besides the pretzels also great with garlic melba rounds.

Sense when is 2 Cups = 8 ounces? That would be 16 oz for 2 cups.

16 ounces = 2 cups in LIQUID measure.  The cheese is in ounces by weight, 8 ounces of shredded cheese = 2 cups by volume.
