Ranch dressing mix flavors this fast-to-fix mixture that’s packed with shredded cheese. “This thick dip is made to go with pretzels,” assures Michelle Long of New Castle, Colorado. “It’s one of those snacks that when you start eating it, you can’t stop! This dip can be made with any type of beer, including nonalcoholic beer. I’ve taken it to many parties and am always asked for the recipe.”

I made this for Super Bowl in 2011 and it was a big hit. It does make quite a bit of dip. Thanks for sharing this recipe; we will be having this again for Super Bowl 2013.

I made this dip a couple years ago for an office party. It was very good and a huge hit. Wasn't any left. I don't recall how "stiff" it was. Curious as to how well it would hold up as a cheese ball? Anyone tried it?

This dip was easy to make, and easy to transport to a picnic. The second time I made it I added real bacon bits to it. Everyone loved it.

My husband and i both love it. It has a cheesy ranch flavor followed by a pleasant beer flavored after- bite. Make it a day ahead for best flavor. It goes well with pretzels or bagel chips.

Served this at my Super Bowl party this past January. Easy to put together and very tasty. Definitely serve with pretzels..the saltiness goes so well with the creaminess of the dip.

I make this same recipe but I add 2 strips of cooked diced bacon, and about a 1/2 tsp. of minced garlic to give it that extra kick. Also use a little bit of sour cream. This is one of those once you start you just don't stop eating recipes. The longer it stays in the fridge, the stronger the beer flavor gets.

I make this dip all the time! It's so easy to make. My friends always request it when we have get togethers. I like to serve it with pita chips.

I liked this dip but it felt like it was missing something. The taste was good but it just seemed a little boring. I will probably try adding additional ingredients next time like chives and red pepper or something.

I tried this for a Super Bowl part and it had mixed reactions. I personally wasn't a fan, too much beer and ranch taste.I think next time I'll try a beer with less flavor and a little less ranch.

I don't even like beer but this dip is one you can't quit eating and sooo easy to make. Everytime we go racing someone from our crew has to bring beer dip and pretzels.

I have made this recipe a couple of times already and everyone loved it. I used a little less cheese (sharp cheddar) and a little more beer to give it a smoother consistency.

I make one very simalar to this. But I use equal parts cream cheese and sour cream. Using a dark beer (gives a good beer flavor) to thin it to a spreadable consistancy. However, it's better if you thin it and then allow it to chill before using, helps thicken it up to a great spreadable dip. We like it best with the pretzel chips. Yummy!

Sorry for being so vague.....8 oz (weight) of shredded cheese = 2 cups (dry measure volume). You can check using a kitchen scale. You may also check the packages of shredded cheese at the grocery store. The small package is 8 oz/2 cups and the larger packages is 12 oz/3 cups.

kimmik22...please check your facts before criticizing the recipe. 8 oz shredded cheese = 8 ounces. Get out your kitchen scale or check the Kraft cheese packages at the grocery store.

I entered this in a Super Bowl Appetizer Contest we had at work and I won 1st place! I wanted something easy to fix and take and this was great! I used sharp cheddar and Miller Light and besides the pretzels also great with garlic melba rounds.

kimmik22 Sense when is 2 Cups = 8 ounces? That would be 16 oz for 2 cups.

16 ounces = 2 cups in LIQUID measure. The cheese is in ounces by weight, 8 ounces of shredded cheese = 2 cups by volume.

This is a great pretzel dip! Next time I'll add a little more beer to take away a little of the stiffness, but the recipe's definitely a keeper.

This dip was so simple, yet so very good! I only used 1-1/2 pkgs. cream cheese and added 3 garlic cloves, minced. I let chill overnight for the flavors to be enhanced! I made this for my husband and his buddies and they were fighting over the last few teaspoons! I will make this again for sure! Thanks for the recipe!

This was very good, I used low-fat cream cheese and added more beer until it was the consistency I liked. Next time I might try some sour cream like other reviewers suggested. Delicious with bread chunks as well as the pretzels

As written it is a little stiff but really great to use as scuellar suggests. When I make it as a dip I use containers of the whipped cream cheese, mexican blend shredded cheese and spicy blend no salt seasoning as the ranch mixes are way too salty. The amount of beer varies as to the texture I am looking for- don't want it too drippy! Always a hit wherever I take it!

Was a little too stiff but added some mayo and it was workable. I used "fiesta" flavored ranch seasoning. I think I would change the cheese from cheddar next time. I found it a little too strong. Maybe some shredded Mexican blend cheese. Otherwise, it was a different dip for Sunday football and it was gone by the end of the day!

This is a tasty dip, but the cream cheese does make the dip a little too stiff. Perhaps mixing in something like Sour Cream would make this more "dippy".
Reviewed on May. 24, 2011 by bnoren
the dip was too stiff . .I would have preferred it more "creamy" . .on the salty side-perhaps 1/2 pkg of the ranch dressing-instead of shredded cheddar AI would recommend 8oz of cold pack cheddar or a cheddar spread perhaps-ALWAYS LOVE your recipes-this one was disappointing.
