Ranch dressing mix flavors this fast-to-fix mixture that’s packed with shredded cheese. “This thick dip is made to go with pretzels,” assures Michelle Long of New Castle, Colorado. “It’s one of those snacks that when you start eating it, you can’t stop! This dip can be made with any type of beer, including nonalcoholic beer. I’ve taken it to many parties and am always asked for the recipe.”

Ingredients

  • 2 packages (8 ounces each) cream cheese, softened
  • 1/3 cup beer or nonalcoholic beer
  • 1 envelope ranch salad dressing mix
  • 2 cups (8 ounces) shredded cheddar cheese
  • Pretzels

Directions

  • In a large bowl, beat the cream cheese, beer and dressing mix until smooth. Stir in cheddar cheese. Serve with pretzels. Yield: 3-1/2 cups.

I just made it for a bbq at work, seeing how I am a mechanic the guys loved it! I just nocked it down a star because lets just say I didn't find it gender neutral, as not many of the ladies liked it. But darn good if like beer. I used Samual Adams

I added this recipe at the last minute to a happy hour menu. It was not good. Way to salty and a definite lack of flavor. I added multiple saltless seasonings to try to help it, and did end up using it on the serving table, but it was NOT well received. It sounded good, but wasn't.

Great St. Patrick's Day appetizer! Used 1/4 cup Guinness and added 1 T Worchestershire sauce. I ended up thinning out with just a little milk since I used less beer than the recipe called for. Delicious!

This recipe was great!

After reading the comments, I went with 1/2 cup of a light beer. However, I didn't think that was even enough & I ended up adding about a full cup. Turned out GREAT!

I let it set in the fridge for about 3 hours.... we ended up having some left over and it's even better the next day, so if you can let it sit for 12+ hours, that's probably best!

Also - I served half of it cold & they other half I just heated up in the microwave in :30 increments, stirring each time. No one could decide if they liked hot or cold better, both were good & had a tad different taste!

Will def. make this again, soooo easy to prepare!

I've made this dip so many times I've lost count. We love it with the flat pretzels and we add more beer so it's doesn't break your pretzels! Awesome recipe.

I made this recipe to use with the southwest pretzel recipe and both were good. I used extra sharp white cheddar cheese and about 1/2 cup beer and it tasted like a blue cheese dip to us.

Add horseradish to taste and use Wispride cheddar in a cup instead of block cheese.

Have made this twice now and it has turned out great both times,this also goes well on saltines or ritz crackers, this is easy to prepare and has great taste. This is a keeper for sure.Yum yum,also good warmed a little in the microwave on the second day if you have any leftovers.

LOVE this recipe. I bring it to lots of get togethers. The only thing I add is @ 1/3 cup sliced green onions. Everyone asks for the recipe and usually it's gone.

This did okay at the Super Bowl party I took it to yesterday. I used Bud Light and Cougar Gold white cheedar cheese. I would make it again, but as a hot dip. I used a food processor to try to get it as smooth as possibly but the cheese caused a very gritty consistency, therefore I will melt it next time. I would also use a much better beer and half the ranch dressing packet.

I have made this dip for years, with chopped green onions in it also. If it get's to thick, just add more beer to thin so it is spreadable

You can always add more beer for more beer flavor, I just add more cheddar cheese to help bring it back to a more solid form.

I get requests to make this dip all the time! I usually even use reduced fat cream cheese and it still tastes great! I also use half a can of beer - as long as you refrigerate it for several hours, its firms right up.

I made this for a 4th of July party and it was a big hit. I only made 1/2 the recipe but added a little more beer and less ranch dressing and some onion flakes after reading the other comments. It was a hit and I will make it again.

I haven't quite made this yet, I'm making it for my boyfriend's family reunion, he's prepping fresh veggies to go with it.

My question is this: is it too thick as is for veggies? (We're talking carrots, celery, snap peas, pepper strips). If so, could I add extra beer until it's just right? Or would buttermilk be okay if it needs to be thinned a bit as there is buttermilk flavour in the ranch dressing anyway?

Also for anyone who has experimented, can I use other dip mixes besides ranch? Like a creamy dill, or a country herb?

I really liked this recipe but would have liked more of a beer flavor. The second time I made this I used dehydrated onion and soaked it in beer to rehydrate. This gave it more of a beer flavor without adding more liquid to the recipe. Everyone liked it and I'm making it again today for a potluck tomorrow. It's even better if made a day or two ahead of time.

I thought this was really good but based on some of the other reviews I made a few modifications. I used 1/2 cup of beer and added a couple of tablespoons of chopped dehydrated onion. I think this is a really good recipe but I would cut down on the ranch next time since I thought it was pretty salty and I love salt. But add the pretzels and it really seemed salty. Either that or I'd add another 8 ounces of cream cheese to cut the salty taste of the ranch. I think next time I'll try using even a little more beer since it was not at all runny using the 1/2 cup instead of the 1/3 cup that the recipe called for. It's really worth making especially if you like pretzels.

This dip is a huge hit! I have been making it for several years now except I use 1/2 cup beer and I also use 2 cups of fancy shred sharp cheddar cheese. It seems to give it a bit more bite! It also goes really well with the butter twist pretzels - try it!

I've been making this as a cheese ball(without the beer)for yrs. except I use envelope ranch salad with buttermilk. refrig in glass bowl for 2 days & roll into ball,then pat pecan or walnut meal(very fine crushed nuts)over all. You can split into 2 smallif like or sprinkle paprika or Hormel bacon bits over. goes quick!!
