Beef and Vegetable Salad with Ginger Dressing Recipe

Ingredients

  • 1/2 lb sliced Italian style deli roast beef
  • 2 cups fresh mushroom slices
  • 1 cup snow peas, trimmed
  • 1 cup baby carrots, halved
  • 6 each scallions, sliced
  • 1 each medium red bell peppers, seeded and sliced
  • 1/4 cup seasoned rice vinegar
  • 1 tablespoon pickled ginger, drained and finely chopped
  • 1 tablespoon sesame oil

Directions

  • In large bowl, toss roast beef, mushrooms, peas, carrots, scallions, and bell peppers. Transfer to serving platter.
  • Insmall bowl, whisk vinegar, ginger, and sesame oil. Drizzle over salad. Serve.
