Beef-Stuffed Zucchini Recipe

Ingredients

  • 4 medium zucchini
  • 1 pound ground beef
    XKick-up the flavor

    With Johnsonville Italian Sausage.

  • 1/2 cup chopped onion
  • 3/4 cup marinara or spaghetti sauce
  • 1 egg, beaten
  • 1/4 cup seasoned bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup (4 ounces) shredded Monterey Jack cheese, divided
  • Additional marinara or spaghetti sauce

Directions

  • Cut zucchini in half lengthwise; cut a thin slice from the bottom of each with a sharp knife to allow zucchini to sit flat. Scoop out pulp, leaving 1/4-in. shells.
  • Place shells in an ungreased 3-qt. microwave-safe dish. Cover and microwave on high for 3 minutes or until crisp-tender; drain and set aside.
  • Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Remove from the heat; stir in the marinara sauce, egg, bread crumbs, salt, pepper and 1/2 cup cheese.
  • Spoon about 1/4 cup into each shell. Microwave, uncovered, on high for 4 minutes. Sprinkle with remaining cheese. Microwave 3-4 minutes longer or until a thermometer inserted into filling reads 160° and zucchini are tender. Serve with additional marinara sauce. Yield: 4 servings.

Fantastic! Made a few slight changes by adding some rice and Italian sausage as suggested by others. Very tasty and easy to prepare. Definitely a keeper.

I added 1/4 pound spicy sausage and took out 1/4 pound hamburger. I added 1 tsp of pampered chef italian seasoning. I was apprehensive like one of the other reviewers, but really liked it!

This is a great way to get the kids to eat veggies! I substituted turkey for the beef and used cheddar. Quick, I'll make it again.

My daughter and I enjoyed this very much. I added some garlic and used a sausage based sauce which may be why I didn't see it as bland.

This was good but I made a few changes. I used seasoned ground turkey instead of hamburger and added cooked rice that I had in the fridge already. I halved 3 large zucchinis, removed the seeds, then mixed all of the other ingredients together (raw meat included) and stuffed the zucchini, topped with a little more marinara sauce, then baked them at 375 for about 45 minutes. I then topped with mozzarella cheese and baked a couple minutes more. Next time I'd add fresh garlic.
