I've been hungry for Beef Barley Soup lately and this recipe hit the spot. Very easy and very good. It's nice that it uses ingredients that I usually have on-hand.

Beef and barley soup is great. I substituded grond turkey to this one. I like how it makes lighter, so I can have a small bowl later in the evening, just as a healthy confort food during these cooler evenings. I did not have peas so I used some chopped fresh kale. Yum! I make it often anf collegues at the office love to see me bring in the crock pot full. I never have to offer it and I come home with an empty dish every time. Buon appettito! ciao

Wonderful recipe! I tried this with lamb, as well. It was REALLY good! My husband asked if I would make it again really soon. And, while he will eat almost anything, he rarely comments on food, let alone asks when I'm going to be making it again!

It is soup weather here in Iowa so I tried this today. I put mine in crock pot and made it according to direction with some of the "review" additions (basil, tomatoes) etc. It was great! Served with homemade bread on the side!
