It's easy for Judy Metzentine to fill her slow cooker and forget about supper...until the kitchen is filled with wonderful aroma, that is! "I've served this soup often to family and friends on cold nights, along with homemade rolls and a green salad," she writes from The Dalles, Oregon. For variety, she suggests substituting jicama (a starchy root vegetable found in the produce department of many grocery stores) for the potatoes.

Beef Barley Lentil Soup Recipe

Ingredients

  • 1 pound lean ground beef (90% lean)
    XKick-up the flavor

    With Johnsonville Italian Sausage.

  • 1 medium onion, chopped
  • 2 cups cubed red potatoes (1/4-inch pieces)
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1 cup dried lentils, rinsed
  • 1/2 cup medium pearl barley
  • 8 cups water
  • 2 teaspoons beef bouillon granules
  • 1 teaspoon salt
  • 1/2 teaspoon lemon-pepper seasoning
  • 2 cans (14-1/2 ounces each) stewed tomatoes

Directions

  • In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
  • Transfer to a 5-qt. slow cooker. Layer with the potatoes, celery, carrots, lentils and barley. Combine the water, bouillon, salt and lemon-pepper; pour over vegetables. Cover and cook on low for 6 hours or until vegetables and barley are tender.
  • Add the tomatoes; cook 2 hours longer. Yield: 10 servings.

Nutritional Analysis: One serving (1-1/2 cups) equals 241 calories, 5 g fat (2 g saturated fat), 17 mg cholesterol, 660 mg sodium, 33 g carbohydrate, 9 g fiber, 18 g protein. Diabetic Exchanges: 2 lean meat, 1-1/2 starch, 1 vegetable.

I've made this over and over again this winter. The first couple of times I made it in the crock pot, but now I cook it on the stove because I don't usually plan ahead. Everybody loves it, including my finicky 10-year-old. I use Better than Bouillon instead of the bouillon granules, since that's what I have on hand, and I add more celery and carrots. I also leave out the potatoes when it's just for my family to make it a little diabetic friendly. It's good either way.

I added an extra 1/2 cup of lentils, carrots and celery and potatoes. I added two extra cups of water and 2 of bouillon granules and extra 1/4 c. of barley. It was perfect and very very flavourful. Very filling!

I will absolutely make this again. I added a little garlic salt, my husband's BBQ dry rub mix into it, and of course (as always) a little Frank's Red Hot Sauce. I also used diced tomatoes with garlic and olive oil (did not have the stewed) and we added sweet frozen corn from our garden. I cooked my (deer) meat with a little olive oil and fresh minced garlic. My husband and I could not stop eating this. Thank goodness I had some left over to freeze. I will defiantly be making this again. Actually, I am making my grocery list right now and I am getting the stuff to make this for dinner this week (we just had this last night for dinner).

I've made this soup three times now. The first time I followed the recipe exactly. It was a very good soup, but I actually thought the beef in it was unnecessary. The second time I made it, I omitted the beef, and it was still delicious. I am cooking it for the third time now, and didn't have any beef granules on hand. I used 4 cups of beef broth, and 4 of water, and mixed in a packet of onion dip mix. It smells good right now.

I loved this soup!! I did make a couple of changes. I did not add onions or barley because of food allergies. I also only added 4 cups of water instead of 8 only because my crockpot was to small and Im glad I did because I think that helped the flavor more:) I added some pepper, and added more beef granules and lemon pepper than what it called for:) Great recipe, and its healthy:)) I think Im going to try it with ground chicken and chicken granules next time and see how that tastes:)

I followed this recipe exactly, and found virtually no liquid in the crockpot when I got home from work. Plus, only 1/4 t. of lemon-pepper hardly gave the broth any flavor. I ended up adding a significant amount of lemon-pepper to additional broth, I also added some garlic powder, 2 bay leaves and italian seasoning - and I still felt like it needed something. This was a disappointment to me. :-(

I was really, really excited to make this dish... I used chuck roast, cut up and seared, rather than ground beef. The beef turned out delicious, but the stew overall was a bit bland. I will make it again, as I like the basic idea, but next time I'm adding some spices (I have a tasty mild chili recipe that I'll scalp for suggestions).

I forgot to mention, I made this soup on top of the stove. I didn't realize it until I was about to make it that the recipe was for a slow cooker. I will make this again & on top of the stove. It didn't take long at all to make it, about a hour.

I just finished making this soup...it is so good! Instead of ground beef, I used diced small stew beef cubes. I have a daughter that has Autism she doesn't like ground beef, it's a textured thing. I didn't have the beef granules, so I used (Herb*Ox) 4 Beef Bouillon Cubes, my store didn't have Hunt's stewed tomatoes, so I used store brand, the tomatoes were big chunks so I had to squished them smaller. It's a very comforting kind of soup. I will be making this again and the way I made it. Thanks Taste of Home!

I cut out the tomatoes, added in more boullion, and thyme, marjoram and rosemary (per other beef barley recipes on the TOH website). Very good. Would consider adding in green beans or corn next time

LOVE LOVE LOVE this recipe! This is a definite keeper and I will make it often. Delicious! I used regular potatoes as opposed to red potatoes, but that is the only thing I changed.

I will make this for sure - was wondering what to do with the lentils in my pantry. I'm thinking I'll make it even more heart healthy by replacing at least some of the beef with 97% FF ground chicken. Hubby is recovering from triple bypass so we are really watching the red meat intake. With that and the low fat, low sodium broth this will be a keeper.

This soup was excellent. I actually doubled the recipe (and added quite a bit more beef bouillon)so I was able to feed the family, freeze a batch for another night, plus send some to work with hubby so he and his co-workers would have a nutrious lunch rather than fast food! I will make this again many times!

I made this soup for supper tonight and it was delish!!!  I didn't put the soup in the crock pot as I had a late start to the day and I like to make soup ahead and let it season.  I used 4 cups of beef broth, low sodium and the rest of the liquid I used water.  I just let the soup simmer on the stove, till it was done and all the veggies, barley and lentil were cooked.

 

VERY GOOD!!!!  A Keeper for sure!!

I was dissapointed that after 8 hours, the lentils and carrots were not cooked :(
