Basil-Garlic Cheese Bread Recipe

Ingredients

  • 1/2 cup butter, softened
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons minced garlic
  • 1 to 2 teaspoons dried basil
  • 1 loaf (1 pound) unsliced French bread, halved lengthwise

Directions

  • In a small bowl, combine the first six ingredients; spread over cut sides of bread. Place on an ungreased baking sheet. Broil 4-6 in. from the heat for 2-3 minutes or until lightly browned. Cut into 2-in. slices. Yield: 10 servings.

Nutritional Facts 2 slices equals 241 calories, 13 g fat (7 g saturated fat), 25 mg cholesterol, 375 mg sodium, 26 g carbohydrate, 1 g fiber, 6 g protein.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

We loved this! We had enough spread for two meals. We served it the first time with the Hawaiian Chicken recipe found here from Taste of Home (TOH) and then with the Chicken Florentine Meatball recipe also from TOH. Wonderful addition for two meals for us.

very good! thought it was weird to add lemon juice but did and it was great! keeper! my brother said best garlic bread ever
