Basil Cheese Spread Recipe

Ingredients

  • 3/4 each plain yogurt
  • 2/3 cup cottage cheese
  • 1 garlic clove, pressed
  • 2 tablespoons chopped fresh basil
  • Pinch salt and pepper
  • 2 ounces roasted red peppers with brine, equal to 1/4 cup, optional

Directions

  • Place yogurt in strainer lined with one coffee filter. Allow to drain for about 1 hour. Yield should be about 1/2 cup.
  • Combine yogurt, cottage cheese, garlic, and basil in a food processor and blend until smooth. Add salt and pepper to taste. Stir in roasted peppers, if desired.
  • Cover and refrigerate for 30 minutes. Serve.
