Big Batch Baked GoodsWe enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

I have made this same recipe for at least 10 years. I got it out of my TOH magazine back then. They are easy to make and taste GREAT! A batch never lasts long around here!

Great recipe that was easy to prepare and used items that I normally have on hand. The muffins were excellent - moist and tasty. I will definitely make this recipe again...and again!

I've made these muffins at least a dozen times. Easy, tasty, and my family loves them. Great way to use those last few over-ripe bananas.

Delicious, light and moist muffins! This is my family's new favorite muffin recipe, and my 5 yr old helped with every step. We made a double batch and used equal amounts mashed ripe plums (skins removed) and bananas, plus added a bit of ground ginger and cinnamon - best muffins we've ever made!

I love these muffins! to add my own twist, I placed 1/2 tsp of peanut butter in the middle for an added bonus! These are so simple to make; I have found a new use for browned bananas! Thank you!

As a new baker, I have had a few flops, but this was delicious! I added light sour cream and it came out very moist. will definitely use this recipe again.

These are the best banana muffins. They come out perfectly every time and they are a big hit when I bring them in to work.
