Bart's Black Bean Soup Recipe

Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1-1/2 cups chicken broth
  • 3/4 cup chunky salsa
  • 1/2 cup canned whole kernel corn, drained
  • Dash hot pepper sauce
  • 2 teaspoons lime juice
  • 1 cup (4 ounces) shredded cheddar cheese
  • 2 tablespoons chopped green onions

Directions

  • In a microwave-safe bowl, combine the first five ingredients. Cover and microwave on high for 2 minutes or until heated through. Pour into four serving bowls; drizzle each with lime juice. Sprinkle with cheese and green onions. Yield: 4 servings.

Editor's Note: This recipe was tested in a 1,100-watt microwave.

My 16 year old daughter made this. She decided it needed more flavor and added a can of chili tomatoes. We put crushed tortilla chips , avocado slices, and sour cream on top. I thought it was delicious.

Doubled the recipe and used homemade salsa. Great, quick dinner! Ate leftovers for lunch the rest of the week :) I will be keeping this recipe! Thanks!

Quick and simple. I added some leftover cubed chicken. The toppings are a must; sour cream is also good.

Great super easy and we had it with Shaws frozen Grouper burgers was a great combo tast went well together. we will have agein and will add to my boating meals for sail on weekend trips.

Just made this soup and it so delicious. It seemed a bit thin and I like a thicker soup so I added a cup of salsa and a whole can of corn. I added everything all at once, brought it to a boil, then let it simmer for about 15 mintues. I also added a lit bit of chili powder and cumin and left out the pepper sauce. I think it would also be good with chicken or ground, cooked turkey and a little jalapeno added.

This soup is delicious! I used dried beans, frozen corn, and made it on the stove rather than using the microwave, but it was still quick and easy.

I doubled this reciped, but added 2 cups cooked chicken. Added some southwestern seasoning instead of hot sauce. Served it with cornbread. WONDERFUL. Should have tripled it!

I made this once for a vacation dinner. Even my sister, who hates spicy foods, LOVED it! I have been looking for it forever- I will make it tonight now that I found it again.

Excellent quick recipe that is full of energy. I added about 1/8 cup of chopped thick sliced Black Forest bacon fried in lime juice to the recipe and it was outstanding. the bacon blended very well with the other ingredients, however I think frying the bacon in lime juice was the key in enhancing the taste of the soup!

This was very quick and easy. I think it could use some salt & pepper, but still good as it is written. I think this could have a lot of variations made to it; onions, garlic, kidney beans, navy beans, chili powder or what ever spices you like. Green chiles would probably be good to in it.
