Bart's Black Bean Soup Recipe

Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1-1/2 cups chicken broth
  • 3/4 cup chunky salsa
  • 1/2 cup canned whole kernel corn, drained
  • Dash hot pepper sauce
  • 2 teaspoons lime juice
  • 1 cup (4 ounces) shredded cheddar cheese
  • 2 tablespoons chopped green onions

Directions

  • In a microwave-safe bowl, combine the first five ingredients. Cover and microwave on high for 2 minutes or until heated through. Pour into four serving bowls; drizzle each with lime juice. Sprinkle with cheese and green onions. Yield: 4 servings.

Awesome! Definitely our new favorite! I put a whole can of corn in, rather than just the 1/2 cup, and substituted taco sauce because I didn't have any salsa on hand. The whole thing took maybe 6 minutes from start to finish! Thanks for this recipe!

VERY good.. I use either a 11 oz.can of mexicorn or southwest style corn with black beans instead of the corn tho. Also a little chopped cilantro with the green onions is very tasty.

Way good! Definitely a keeper. Doubled the recipe and added extra corn plus some cubed, cooked butternut squash. Pureed a half can of the beans and added to soup for extra thickness. Topped with sour cream, sprinkled on a small amount of shredded cheese and avocado.

Made this over the weekend and it is going to be a new staple in our home. My husband and I both loved it, not to mention how easy it was to throw together. We did a full can of corn and doubled the taco seasoning. Really great and the green onion was perfect on top!

Really good and so easy and fast to whip up. My husband and I enjoyed this quick hearty soup on a laid back fall evening. Perfect end to the day. We served it with chunks of crusty bread- very tasty!

I used Rotel instead of salsa (1 can), frozen corn, skipped the hot pepper sauce (Rotel adds a lot of spice), and also topped with guacamole, cilantro, and a chopped chicken breast I sauted on the stove top with southwest seasonings. The soup was a huge hit at our house!

This was a really quick and easy soup. I added half a pound of ground hamburger and we ate it with scoop tortilla chips. I also added the entire can of corn and broth so that none went to waste. My 2 year old and 6 year old both gobbled up their bowl. Definitely a recipe worth trying.

Wow! So good. Another great ease of preparation recipe for our RV trips. I used frozen corn since I always have a bag of it on hand, but would use the can if I double the recipe (and I will ☺)

This has become my favorite soup! I added a small can of white chicken meat and mixed in a TBS. of sour cream. And definitely add the lime juice - it really adds a "spark" to the soup. I will be making this all winter long!

I've made this twice now. First time as a soup and the second time as black bean salsa, by only putting 1/2 cup Chicken Broth. It was a hit both times.

Super easy, super delicious! Added the chicken, as was suggested by other reviewers. The lime juice is the perfect touch! Also added a dollop of sour cream to each bowl. Everyone gave a big thumbs up to this dish!

This was fab! i upped the amount of broth by half a cup and the corn to a cup... Loved it!! I added a little chopped cilantro on top along with the green onions and it was so good. Definitely a do again! Might double it next time though.

My husband and I both loved this! I used the Target brand (Archer Farms) organic cilantro salsa and added a bit more corn. It was really filling! I agree that some shredded chicken would make the soup even more hearty and delish!

Made this for dinner on the stove tonight. Only variation I made (besides the stove/microwave) was substituting an avacado instead of cheese. Both my husband and I loved it. Since we made it with cornbread it was hard to tell if the soup alone was filling enough for both of us. Very possibly could have been, because while even though it doesn't make that much quantity, the beans sit kinda heavy =) Next time I may add a little extra corn and salsa just so it goes a little further without making any side dishes. Either way, my husband and I both agreed this recipe is a winner! From a cook's perspective you can't beat the ease of preparation and how common the ingredients are (any given day I should have all this in my cupboard). Thanks TOH for yet another fail proof recipe!

definitely one of the quickest recipes I have ever made. It's very good. I would like to add a bit of cumin or something the next time. You can't even buy fast food this fast! And this is healthier than fast food, although I bet the sodium is high.

I made this soup last night and DOUBLED it and added 1 15oz can of Pinto Beans. This was a very enjoyable soup and I will definitely be making this again, maybe adding some sausage and rice.

Yum yum yum! I made this on the stove top. The lime juice really makes it delicious. I'm thinking of adding shredded chicken to it next time. Delish!

ICouldln't believe how good this was for being so easy and quick! Delish with crushed tortilla chips added in bowls! Recipe on the scant side, need bread + salad to make this dinner for 4.

I fixed this on the stove (just as easy as using the microwave and not much more time). I'm going to have to double the recipe next time, because the "4 servings" it made weren't really enough for just me and my husband!
