Barley Beef Skillet Recipe

Ingredients

  • 1 pound lean ground beef (90% lean)
    XKick-up the flavor

    With Johnsonville Italian Sausage.

  • 1/4 cup chopped onion
  • 1 garlic clove, minced
  • 1 can (14-1/2 ounces) reduced-sodium beef broth
  • 1 can (8 ounces) tomato sauce
  • 1 cup water
  • 2 small carrots, chopped
  • 1 small tomato, seeded and chopped
  • 1 small zucchini, chopped
  • 1 cup medium pearl barley
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the broth, tomato sauce and water; bring to a boil. Stir in the remaining ingredients. Reduce heat; cover and simmer for 45-50 minutes or until barley is tender. Yield: 4 servings.

Nutritional Facts 1-1/2 cups equals 400 calories, 10 g fat (4 g saturated fat), 73 mg cholesterol, 682 mg sodium, 48 g carbohydrate, 10 g fiber, 30 g protein.

Seeding Tomatoes

Summer is the perfect time of year to enjoy fresh juicy tomatoes in all types of recipes. It's usually not necessary to remove the seeds from tomatoes before using. But for some recipes, seeding the tomatoes can improve the dish's appearance or eliminate excess moisture. For example, it's not important to seed tomatoes when preparing a tossed salad. But it's nice to remove the seeds when making creamy tomato soup to ensure a smooth texture. And using seeded tomatoes when assembling a casserole can prevent it from becoming watery. To remove the seeds from a tomato, cut it in half horizontally and remove the stem. Holding a tomato half over a bowl or sink, scrape out seeds with a small spoon or squeeze the tomato to force out the seeds. Then slice or dice as directed in the recipe.

This was a delicous meal. Easy to make...Recipe makes more than 4 servings...I took Turkey stock (as I made mine with ground turkey instead of beef) and added the stock to the leftovers to make a hearty soup

Loved this recipe! To be healthier, substituted ground turkey for ground beef. Also, took the submitter's advice and added some chili powder and tabasco. Delish! Definitely will make again, but probably with more veggies.

This was SO GOOD. I made the recipe exactly as posted and I absolutely loved it. The serving size is huge and filling and it just tastes great. Just make this. It's awesome.

I used quick barely and omitted the cup of water and that cut down on the cooking time so that it was a 30 minute meal. I also just added a can of diced tomatoes, drained in order to simplify even more. It was tasty!
