  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 4 slices pepper Jack cheese
  • 1 cup KC Masterpiece®

Directions

  • Carefully cut a pocket in each chicken breast half. Fill with cheese; secure with metal or soaked wooden skewers.
  • Grill chicken, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or a thermometer reads 170°, basting frequently with barbecue sauce. Yield: 4 servings.

This was delicious. I read the other comments first, so I decided to experiment . I bought some new thin, long metal skewers. I used 1 1/2 slice of cheese for each chicken breast; stuffed it in tight and then "sewed" the opening shut with the skewer. I cooked them on the grill, and only lost a tiny bit of cheese. Give it a try, the skewers came in a pack of 4 at Kroger for $2.99.

Very easy and simple recipe to make on the fly. I switched the cheese to shredded Monterey Jack with Jalapeno Pepper, it gave the chicken some pop. Broiling this recipe worked out better then expected.

If only you could grill this and the cheese didn't melt all out. It's great tasting and a great idea, but I think putting the cheese in at the end is the way. No way you can grill this without losing all the cheese. I think you need to cut the pocket, grill and baste it with the barbecue sauce and the last 5 minutes or so, stuff the cheese into the pocket.

A quick & easy favorite. My fiance has often requested for me to make it again. We like to just add the pepperjack when the chicken is about done cooking rather than placing the slice of cheese inside the chicken breast because it seems like it melts too much when it's under the broiler that long. Countryside BBQ sauce is great in this recipe.

This recipe was delish! I used about 3 slices of cheese after reading other reviews and it was wonderful paired with my seasoned green beans and corn bread... this will definitely be a staple in my home :)

Chicken tastes yummy, but the nutritional is very wrong for 4 servings. Just the 6 ounces of chicken is over 200 calories. Add in the cheese and barbecue sauce, and you're easily over 300 calories. A 6 ounce serving is too big anyway.

Very yummy chicken! I used pepper jack cheese for me and provolone for the rest of my family. The cheese definitely melted out so more is better. I used chicken tenders and baked them in the oven at 375 for 30 min. I don't normally like pepper jack, but this went really well with the bbq sauce.

I made this recipe when my family and I went camping. Very easy to make. We tried it with Swiss cheese, and my young daughters loved it.

We all agreed that we like the flavor of this dish, but the cooking time was way off. I used the oven broiler method and even though I only broiled it the minimum length of time indicated, it was overdone. I will either cut back the cooking time even more or try it on the outdoor grill.

This is going to become a staple in my home. I agree to using more cheese next time. I basted the chicken a total of 4 times with as much BBQ sauce as I could fit on there! It made for a very tasty meal, as we paired it with rice & broccoli.

This was good but could be better. Next time I will more than likely marinate the chicken for a while before grilling. Also I will try to put in 2-3 layers of cheese. The one layer soaked into the ckicken and out on to the grill so not much was left for flavor. This one has potential.

This is a super-easy, super-delicious meal. We use different kinds of cheese depending on what we have, but this recipe has become a staple in our home. Plus, since we cover the cookie sheet with foil, there is little to no clean up.
