The reader writes to us from Carolina barbecue country, Raleigh, North Carolina, and sends her recipe for Barbecue Ham Sandwiches that has been in her family for over 50 years. “My mother would make a batch of sauce on Saturday, buy the ham, and after church on Sunday, our hungry family would be able to have a fast meal,” she writes.

Barbecue Ham Sandwiches Recipe

Ingredients

  • 1 cup plus 2 tablespoons chili sauce
  • 3/4 cup packed brown sugar
  • 1/2 cup plus 1 tablespoon water
  • 3/4 teaspoon prepared mustard
  • 1/4 to 1/2 teaspoon chili powder
  • 1/8 teaspoon ground cloves
  • 1-1/2 pounds shaved fully cooked ham
  • 6 hamburger buns, split and toasted

Directions

  • In a large saucepan, combine the first six ingredients. Cook, uncovered, over low heat for 15 minutes. Stir in ham; heat through. Using a slotted spoon, serve on buns. Yield: 6 servings.

Nutritional Facts 1 serving (1 each) equals 394 calories, 6 g fat (3 g saturated fat), 41 mg cholesterol, 1,922 mg sodium, 65 g carbohydrate, 1 g fiber, 24 g protein.

Quick Homemade Croutons

I hate to waste the heel from a loaf of bread or a few leftover hot dog or hamburger buns. So I cube them into a bowl, spray them with nonstick cooking spray and season with garlic powder, parsley and basil or oregano. Then I bake them on a cookie sheet at 250° until they’re crisp and brown. My family loves the quick homemade croutons. —Nancy C., Windermere, Florida

Just made this a 2nd time, this time for a Super Bowl party. It was a hit, served it on wheat buns. I doubled the recipe, very easy.

Why not marinate the ham in the sauce, before grilling it?

This sound really wonderful,do you think it would work by dipping the ham in the sauce as you use it? The reason I ask is, I want to try it in my grill at work.

You're right. The "fast" in the recipe means quick to prepare.

I think perhaps what she meant was fast to prepare. At any rate, I'm putting this on my list of things to try. Sounds tasty and easy to make.

Recipe sounds nice, but if you have to eat FAST, why bother at all! It's like you want to get it over with!
