Bananas Foster Sundaes Recipe

Ingredients

  • 1 tablespoon butter
  • 3 tablespoons brown sugar
  • 1 tablespoon orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 large firm bananas, sliced
  • 2 tablespoons chopped pecans, toasted
  • 1/2 teaspoon rum extract
  • 3 cups reduced-fat vanilla ice cream

Directions

  • In a large nonstick skillet, melt butter over medium-low heat. Stir in the brown sugar, orange juice, cinnamon and nutmeg until blended. Add bananas and pecans; cook, stirring gently, for 2-3 minutes or until bananas are glazed and slightly softened. Remove from the heat; stir in extract. Serve with ice cream. Yield: 6 servings.

When you're short on time, you can easily add some frosty fun to dinnertime by serving up a variety of toppings and sauces and letting family members concoct their own scrumptious sundaes. Or scoop up one of these sweet and simple suggestions and treat your family to a refreshing dessert:

  • Drizzle chocolate sauce over a scoop of strawberry ice cream and top with sliced berries and kiwi. Dollop with whipped cream.
  • Instead of the usual chocolate sauce, top vanilla ice cream with warmed orange marmalade and a few fresh berries.
  • For a super chocolaty treat, place a scoop of chocolate or chocolate mint ice cream on a brownie and pour on the hot fudge sauce. Add a spoonful of whipped cream, sprinkle with peanuts and accent with a maraschino cherry or a chocolate kiss.
  • Like s'mores? You'll love this! Dress up a scoop of ice cream with chocolate sauce, mini marshmallows, whipped cream and graham cracker crumbs.
  • Give a tropical-flavored ice cream added appeal with canned mandarin oranges and pineapple chunks. Serve with gingersnaps.

My sister-in-law loves Bananas Foster, so we brought it to dinner at a friend's home when she was also there. It turned out wonderful just as it is. We will certainly be enjoying it again. Thank you

Such a different taste, try real rum, then light on fire to burn off alcohol. YUM !

Wonderful, delicious, quick and easy. I used sugar free ice cream and brown sugar blend. Will definately be making this one for company as well as for the two of us.

My husband was wild for this dessert! I have always loved Bananas Foster; this had a little too much nutmeg for my own personal taste.

I will just cut it back next time. Yummy!

I had some extra bananas so decided to try this recipe. I followed the recipe except I eliminated the rum extract. It was very good! My husband and 12 year old son have requested this one again. Quick and easy to prepare with ingredients I had on hand.

My husband and I both loved this recipe!! I will make it again and again I'm sure. I left out the rum and forgot to toast the pecans. It was still heavenly!

I substituted 1 tsp. of rum for the rum extract because I didn't have it in the house.

We also used light ice cream so I hope I compensated for the extra calories.

YUM! This was so easy, different, and delicious. I used Smart Balance butter in place of real butter and it worked just as well.

The picture seemed to show more sauce on the ice cream than the recipe made for six servings. I might double the sauce and leave the bananas the same next time. I used Meyer's Dark Rum because I didn't have any Rum Extract on hand.
