Banana Rum Sundaes Recipe

Ingredients

  • 3 tablespoons butter
  • 3/4 cup packed brown sugar
  • Dash ground nutmeg
  • 4 medium firm bananas, halved and sliced
  • 1/4 cup golden raisins
  • 1/4 cup rum
  • 2 tablespoons sliced almonds, toasted
  • 1 quart vanilla ice cream

Directions

  • In a large nonstick skillet, melt butter over medium-low heat. Stir in brown sugar and nutmeg until blended.
  • Remove from the heat; add the bananas, raisins, rum and almonds. Cook over medium heat, stirring gently, for 3-4 minutes or until bananas are glazed and slightly softened. Serve with ice cream. Yield: 6 servings.

Banana Basics

Look for plump bananas that are evenly yellow-colored. Green bananas are under-ripe, while a flecking of brown flecks indicates ripeness. If bananas are too green, place in a paper bag until ripe. Adding an apple to the bag will speed the process. Store ripe bananas at room temperature. To prevent bruises, a banana hook or hanger is a great inexpensive investment. For longer storage, you can place ripe bananas in a tightly sealed plastic bag and refrigerate. The peel will become brown but the flesh will remain unchanged. One pound of bananas equals about 3 medium or 1-1/3 cups mashed.

This had excellent flavor. Next time I am going to reduce the sauce a bit before adding the bananas. Pineapple would also be good with this sauce. (Pineapple Upside-Down Cake...)

Made this again today - didn't have enough bananas so I used apples and bananas - also added chopped,crystallized ginger - yum!
