Banana Crumb Muffins Recipe
  • Prep: 15 min. Bake: 20 min. + cooling

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large ripe bananas, mashed
  • 3/4 cup sugar
  • 1 egg, lightly beaten
  • 1/2 cup butter, melted
  • TOPPING:
  • 1/3 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon cold butter

Directions

  • In a large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened.
  • Fill greased or paper-lined muffin cups three-fourths full. Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins.
  • Bake at 375° for 18-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Yield: about 1 dozen.

Nutritional Facts 1 serving (1 each) equals 243 calories, 9 g fat (6 g saturated fat), 41 mg cholesterol, 332 mg sodium, 39 g carbohydrate, 1 g fiber, 3 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. This recipe was FANTASTIC! I don't think I will ever go back to regular banana bread! These are AMAZING! My Coworkers had a dozen gone in about 3 minutes. A MUST make for any banana bread lover. Thank you taste of home. This is DEFINITELY going in the recipe box.

My families FAVORITE muffin...the crumb topping really makes it special...I made 4 batches of these to send to my hubby's work and they were gone within minutes. Great way to use up extra bananas without having to make a big loaf of banana bread. Yummy!

I have made these MANY times. Sometimes I add chopped pecans to either the crumb topping or the batter or I stick to the original. Whichever way I make them they are gone within a short time!
