Big Batch Baked GoodsWe enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

Millsma is right-- substitute with some pineapple adds texture and flavor. This recipe is a keeper.

when I have ripe bananas this is the first recipe I turn to. Sometimes I add mini chocolate chips or chopped nuts. They always turn out delicious.

This is a great recipe. I have made it twice, the second time with butterscotch chips. Would definitely recommend.

The crumb topping sort of collapsed into the muffin when I tried this recipe. Tasted fine, but looked deformed.

Hi Wendy my name is Mattie and I live in Sacramento, CA and I just read your comment on the Banana Crumb Muffins and I was just amazed at the fact your 4 yr old will only eat that particular muffin, my 4 yr old grandson is the same, its the only muffin he likes also. I'm okay with it because it healthy made and delicious. My hat off to the producer of the recipe.
