Big Batch Baked GoodsWe enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

Added another Banana to increase flavor and reduced chips to 3/4 cup. Baked nicely, but OK overall.

I made this recipe primarily because it only required one banana which was all I had. They were really good, nice & moist, with a mild banana flavor. My family loved them too of course. Gone in a day!! I did note that 15 minutes was plenty of time for baking them.

These are my teenage sons favorite muffins. He and his friends all beg me to make them for them. I have to double and even triple the recipe to keep up with the demand!!
