Banana Chip Muffins Recipe

Ingredients

  • 1 egg
  • 1/3 cup vegetable oil
  • 3/4 cup sugar
  • 3 medium ripe bananas, mashed (about 1-1/3 cups)
  • 2 cups all-purpose flour
  • 1/2 cup old-fashioned oats
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup miniature semisweet chocolate chips

Directions

  • In a large bowl, beat egg, oil and sugar until smooth. Stir in bananas. Combine the flour, oats, baking soda, baking powder and salt; stir into the banana mixture just until moistened. Stir in chocolate chips.
  • Fill greased muffin cups three-fourths full. Bake at 375° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Nutritional Facts 1 serving (1 each) equals 275 calories, 10 g fat (3 g saturated fat), 18 mg cholesterol, 201 mg sodium, 44 g carbohydrate, 2 g fiber, 4 g protein.

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. The oats in this recipe give it more texture than typical muffins. Love the crunch of the top with the moist chocolately inside!

This recipe was quick to put together and it tastes delicious!! I was worried the oatmeal would make the muffin grainy, but I wouldn't have noticed the oatmeal if I hadn't seen the recipe. Delicious! Thanks for sharing! :)

These are moist and delicious! The recipe made 10 jumbo muffins for me (baked about 25 minutes). I didn't have any chocolate chips, so I crumbled two Peanut Butter Moon Pies in their packaging, then dumped them in - so the muffins had chocolate and a little bit of peanut butter flavoring! Yum - thanks for the recipe :) My favorite breakfast is one jumbo muffin, one link sausage, and one hot cup of coffee!
